
Woo hoo, GBBO is back! I’m not sure if I was more excited or if the girls were. Over the summer they sneaked down one night after bedtime and saw Rich and I watching the Bake Off the Professionals, not surprisingly they loved it and started watching it, they then discovered there’s a junior GBBO too. They can’t get enough of it all! We are all looking forward to the new series and trying plenty of new recipes again. So here’s our first technical challenge.

I don’t think I have ever made a Battenberg, I know they have made it on the bake off before but I don’t think I had a go at it and the girls have never had one either, but they both love marzipan. The recipe can be found here. As usual we did it all in stages, trying to fit it in around swimming, ballet, rugby and running!

We ran out of ground almonds and so did the local supermarket so we used some whole almonds and blitzed them up, which meant our marzipan was a little coarser than it should have been. We made extra jam as the apricots weren’t as tasty as they were 2 months ago, so we used the whole punnet to make the jam instead of eating them, great way to use them up and the jam is delicious.

They were quite fiddly to make and we ended up with plenty off offcuts of sponge and marzipan which we enjoyed too! The Battenbergs were delicious but definitely not mini! We are all looking forward to tonight’s GBBO already.

So glad you are back. I think that I will stick with making a larger size after reading what you wrote. I have never tried these before even though Battenburgs were made in a previous season.
