
When they first made filo pastry on the bake off as a technical, I had a go and I remembered saying next time I would buy the pastry as it was so time consuming! But it wouldn’t be a proper technical challenge if I bought it and I had two very keen helpers this week, so we spent Sunday making a lot of mess attempting this one, click here to keep reading.

Chloe helped with all the prep, making the dough, tzatziki and cooking the spinach, her favourite part was crumbling the feta cheese and having her hands covered in feta and being able to lick it all off, apparently it was just as good as cookie dough! She also enjoyed trying the spinach and licking the spoon of the tzatziki. The recipe can be found here.

After lunch, we divide the pastry into five so I did the first piece and then the girls had two pieces each to roll out with the pasta machine – with a bit of help. They enjoyed turning the handle and seeing the pastry get longer and longer.

With help we layered the pastry up and they brushed each layer with melted butter, I was amazed by how stretchy the pastry was and how thin you could get it without it breaking. We filled it with the cooled mixture and all helped to roll it up. It didn’t fill the tin, but it baked perfectly and the girls absolutely loved trying it for tea, Emily had seconds and the tzatziki is now being constantly requested!
