Classic Pink Rose 100th Birthday Cake

I’d never made a 100th Birthday cake before, so I was thrilled to be given the opportunity to make one. It was for our close friend’s Granny, who is called Rose, so the request for pink roses on the cake was perfect. The cake was a light fruit cake, a delicious recipe from an old cook book that our Mum has, great for this time of year! Click here for the recipe.

In my office there is a cake trolley every Friday for charity – the charity changes each month. February’s cake trolleys were to raise money for Maggie’s Centre in Newcastle – Maggie’s offers free practical, emotional and social support to people with cancer and their families and friends. Until last week I’d been busy every Friday in February making cakes for other people. So last Friday was the first week I was able to bake something for the trolley and I wanted to make something slightly different so on Thursday night this little piggy stayed home and made these piggy-themed cupcakes!

When I came up with the idea of making a selection of “party biscuit” cupcakes, there wasn’t a recipe for Bourbon biscuit cupcakes in the new Hummingbird Bakery book so I decided to come up with a recipe myself. I couldn’t remember the last time I had a Bourbon biscuit so I had to buy a packet so I could taste them to remind myself what they were like! After tasting a couple, Tom and I decided that the biscuits themselves were pretty flavourless, it was the buttercream sandwiching them together which had the chocolate flavour.
