Last week I had a week from hell at work – 60 hours worth of hell. However, I’d agreed a while ago to make these cakes for a friend in the office. I didn’t want to let her down so last Thursday evening I somehow managed to fit in making them. They had to be pastel pinks, purples and white, some with 21’s on, some with Jodie’s on and some with both on so I came up with a design I wanted to do. However, I was too tired to make them exactly as planned – I guess I’ll just have to save that design for another time.
I made the decorations in the same way that I did for the happy birthday cupcakes I made – biscuits covered in icing. I probably would have been much quicker if I’d just done icing letters but I’ve put icing directly onto buttercream before and it absorbs the moisture from the buttercream and goes floppy. If I’d had more time to make the icing letters/numbers the night before to leave them to dry out and then put them onto the cakes the following day when the buttercream had hardened slightly it might have worked. But I had to make and assemble them all in one evening so I went for the biscuit option. Plus biscuits taste nicer than just lumps of icing.
