Time for another technical challenge! A slightly unusual one this week, like all the other contestants I hadn’t heard of dampfnudeln either. I love making bread, but I don’t really do it very often as my hubby can’t really eat gluten. Mary Berry said these are a bit like iced buns, so I thought they would probably still be suitable for me to take to the baby group on Thursday morning and rather than making the plum puree and vanilla sauce, I thought I would just put some icing on top instead and hope that the Mums and Dads at the group aren’t too disappointed that they haven’t got any cakes or biscuits this week. The recipe was pretty easy to follow and can be found here, I made the dough, kneaded it and then left it to rise – the recipe said to leave it for at least and hour, but after an hour and 40 mins mine still wasn’t quite double in size, but I was running out of time, so I had to get on to the next stage. I weighed the dough and divided it into 12 pieces and rolled it into balls and place it into the warm cooking liquid. Again, it didn’t really rise much, so I left it for a little bit longer before putting the pan on the heat to cook them.
Once on the heat I set the timer and made sure I didn’t get tempted to take a peek before the time was up. After about 28 mins I took the lid off and was pleasantly surprised to find my pan had some large puffy dampfnudeln in! I cooked it for a few more mins before removing from the heat as I could hear the liquid had pretty much all gone.
I turned the pan upside down onto the lid and was happy to discover that the bottom was nicely caramelised and not burned. They were lovely and squishy on top and when pressed they bounced straight back, which I am pretty sure is a sign that they are cooked. I’m looking forward to trying them tomorrow morning. I’m not sure they are something I would make again, but it was interesting to try them out.
