
I always try to anticipate what the technical challenge is each week to make sure I have the ingredients delivered in our online shop on Monday night or have planned to incorporate it into the weekly meal plan. It looked like the bakers were stir frying vegetables and the only thing I could think of using pastry and stir fried veg were spring rolls. We love spring rolls, but I wasn’t really feeling very enthusiastic about making them, I think it was the thought of rolling out the super thin pastry dough. Click here to keep reading.

Having watched the bake off on Tuesday night I was quite relieved to see although it was quite technical, it wasn’t as bad as I though it was going to be. I didn’t manage to get hold of the right type of mushrooms, so I used shiitake mushrooms instead. The recipe can be found here.

Rolling out the dough was much easier than I thought. Although I wish I had rolled them into a roughly square shape and then just trimmed a small amount off as it seemed quite wasteful cutting a circle into a square – I really hate wasting food! The assembly was a bit fiddly and I ended up a bit eggy trying to get it all the stick without it all coming undone and the filling coming out. Then I made the mistake of putting them all on a plate together ready to fry 20 mins later – unfortunately they all got a bit stuck together and stuck to the plate. I managed to get them off without too much damage. We enjoyed them for dinner, they were very good and the pastry was lovely and crispy.
