It’s been a while since I made some cupcakes, especially ones that were an usual flavour and not just vanilla/chocolate with decorations on. So when I decided to go down to London for the afternoon to meet my best friend’s baby, I offered to make some cupcakes to take. I’ve already got a lot of rhubarb (I’ve made rhubarb and raspberry Frangipane tart, rhubarb crumble muffins, and I still have about 750g left!) so I decided to bake something with rhubarb. I’ve always wanted to have a go at making fondant fancies and a few weeks ago it was my friend Karen’s 30th Birthday and all the food for the party was kids party themed, so this was the perfect opportunity to give them a go. I definitely need a lot more practise as they aren’t the easiest thing to make, but I had a bit of fun trying them out. The party food was great –  I can’t remember the last time I had Skips or cheese and pineapple on sticks – amazing! Click here for the recipe.

photo (85)Later this year I’ll be making my sister’s wedding cake. She wants one of the layers to be a chocolate biscuit cake, so, as a trial run, I decided to make a couple of the layers of her 30th birthday cake as chocolate biscuit cake. I wanted to try two very different recipes to see how they tasted and how easy they were to marzipan and ice. My mum made the top layer – it was a very rich, fruity, and slightly alcoholic chocolate biscuit cake. I made the middle layer – a biscuit cake which was more similar to rocky road.
