I’m always looking for new ways to decorate cupcakes, and when I came across a photo of these, I decided they were too cute not to make. I was looking for something autumnal and had done various searches on the internet before I discovered them. Finding the ingredients to make them was the trickiest part – I think I had to empty 12 tubes of Smarties before I found enough red ones to make the toadstools and even then I didn’t have enough to make one to go on each cake as planned but I decided that if I went back to the Co-op to buy a third lot of Smarties they might start to ask questions so I left it! London Underground Cupcakes

Two of the partners in my team at work moved to London earlier this summer, so for their leaving do, their P.A. asked if I could make them some London themed cupcakes. Given I was making quite a lot of them I decided I needed to keep the design simple. London Underground signs seemed like a good choice and I was able to make them in advance. Tour de France Cupcakes

My Uncle Pe-pe is currently cycling from John O’Groats to Land’s End with his brother-in-law Tim. He’s not going at quite the same speed as the Tour de France but then he’s not a cyclist, they’re not having any rest days and they don’t have a support crew following them so they are cycling with all their kit and camping, so he’s doing an amazing job! Rather than just donating, I decided to use a tiny amount of the money I was going to donate (less than £5) to make some cakes to raise a bit more money… and that’s when I came up with these cupcakes. A few weeks ago it was pointed out to me that I hadn’t done much baking for the office. I also realised I hadn’t bought anything back from holiday with me. So I decided to make some cupcakes to take into the office. Since the weather had been pretty rubbish, I thought some sunflower cupcakes might help bring the sun out… and they did! Last weekend it was my Grandma’s birthday. She loves knitting so when I saw these in one of the Hello Cupcake! books I knew I had to make them for her. I thought they would be fairly quick to make and decorate, and they were. However, I didn’t quite leave enough time for th cakes to cool down before I had to ice them so I ended up icing them while they were still warm – not something I would recommend! I’ve been wanting to make these cupcakes for ages and they were definitely worth the wait. The caramel cream cheese buttercream is probably one of the best buttercreams I’ve tasted for a while – the texture was so smooth and silky and it had just the right sweetness. I wanted to make some cupcakes which looked amazing for the bake off in the office yesterday to enter into the showstopper category. I’d looked through my Hello Cupcake book on Monday night but nothing jumped out so I asked Bertie in the office for ideas – she said I should make “the bear”… I think she was getting mixed up with Children in Need! But it did give me the idea of making Red Noses. This year’s noses are pretty cool and even have feet (they’re meant to be “di-nose-saurs”) but I decided making them 100% identical would take too long given I had other stuff to bake too, so I took the simplest one and based it on that. Several years ago (probably over 20!) I got a Cadbury’s Crunchie bar at a birthday party I went to. I decided I didn’t want to eat it so I gave it to my grandpa. However, he forgot to take it home with him so I held onto it until the next time I saw him. For a while afterwards he called me “Crunchie” and I would always get a Crunchie at Christmas or a Crunchie Easter egg at Easter. So when it came to trying to decide what to make him for his birthday this year I decided to make Crunchie cupcakes.
