Last night I had a break from all the Christmas baking I’ve been doing and made these: cupcakes for Karein’s last day in the office before she goes on maternity leave. I think they might be the cutest cupcakes I’ve ever made so last night I stayed up to write this blog post just so I could post it as soon as possible! This was the cake which I made to go with Kiri’s cupcake shoes – if you have a pair of shoes, you need a box to go with them. So, for the main cake I made a carrot and ginger cake and disguised it as a Jimmy Choo shoe box. The cake is from the Hummingbird Bakery Cake Days book (yes, I’m slowly making my way through all the recipes). It was huge but tasted really good. Click here if you want to keep reading.

Where do I start? This weekend my sister Becky came up to stay and we had a non-stop baking weekend so I’ve got so many things to blog about. I’m going to start with these shoes. Our first baking project was to make a cake for Kiri’s birthday party on Saturday night. Kiri LOVES shoes so when she asked me to make a birthday cake for her I knew exactly what I would make. I’d seen a photo of cupcake shoes on this website ages ago and I’d been looking for a reason to make them – Kiri’s birthday was the perfect occasion. Fancy some edible Jimmy Choos?

Last week, I played in a uni hockey tournament after work. The day before I asked people in the office what flavour cupcakes I should make to keep us going. James suggested “Lucozade” and Kiri suggested “half time orange” cupcakes. So I went with Orangeade – I bought a sample pack of Soda Stream syrups when I made some Cola cupcakes a while ago and I hadn’t used any of the other flavours yet so I decided to give the orange one a go. This weekend I decided to have a cooking weekend – I did a roast chicken, made two different types of soup, baked muffins for breakfast, made the Christmas cake, baked and (half) decorated some Halloween cookies, and I also made these… chocolate orange pumpkin cupcakes.

I wanted to make two fruity cocktails and two non-fruity so after asking a few people for suggestions, I decided on White Russian as one of the non-fruity ones. I don’t think I’ve ever had it before as a cocktail but it sounded good to me in cupcake form! I did a quick google search and came across a recipe on Baked Perfection. I often get asked how I find the time to do so much baking. The truth is, I don’t know! But I think if you enjoy something then you always manage to find time to fit it in. I would love to be able to bake something new everyday and then post it on here but the truth is that if I did that then I’d probably end up so fat that I’d be unable to get out the house. Instead, I’ve decided that I’m going to restrict myself to baking one, or maybe two new things (or maybe more if there are special occasions) a week to put on here. I have a whole load of cupcakes which I baked before I set up this blog so in between baking new things, I’m going to blog about them – provided I’ve got good enough/good photos since most were just taken on my phone!
I made these cupcakes for my birthday this year. On the evening of my birthday I went out for cocktails so I wanted to stick with the theme and decided to make four different cocktail flavoured cupcakes: Mojito, Brandy Alexander, White Russian and Pina Colada. Given they’re all quite different, I’ll be doing a separate post on each one. I think the mojito ones were my favourite so I’m going to start with them

Butterfly Cupcakes
So, what should I do for my first post?! I guess I should start with something simple! The cupcakes I probably make most often are plain vanilla or chocolate – usually because they always go down well and they’re quick and easy to make, giving me plenty of time to decorate them! My favourite recipes are from The Hummingbird Bakery Cake Days book – they’re simple to make, they always come out perfectly and I know they taste good! And the decoration I’ve made the most? Probably these chocolate flutterbies. Although I’ve only made them four times – I like trying new things!
