Since I’ve got four cocktail cupcakes to write about, here’s the next one… Pina Colada! Again, these were from The Hummingbird Bakery Cake Days. There are 4 different mini cocktail cupcake recipes in the book and I made three of them – I didn’t make the Strawberry Daiquiri ones since my birthday is in February and although I probably could have got hold of strawberries (since you seem to be able to get any fruit at any time of year these days) I decided that they probably wouldn’t be that tasty so instead opted for White Russian ones. I often get asked how I find the time to do so much baking. The truth is, I don’t know! But I think if you enjoy something then you always manage to find time to fit it in. I would love to be able to bake something new everyday and then post it on here but the truth is that if I did that then I’d probably end up so fat that I’d be unable to get out the house. Instead, I’ve decided that I’m going to restrict myself to baking one, or maybe two new things (or maybe more if there are special occasions) a week to put on here. I have a whole load of cupcakes which I baked before I set up this blog so in between baking new things, I’m going to blog about them – provided I’ve got good enough/good photos since most were just taken on my phone!
I made these cupcakes for my birthday this year. On the evening of my birthday I went out for cocktails so I wanted to stick with the theme and decided to make four different cocktail flavoured cupcakes: Mojito, Brandy Alexander, White Russian and Pina Colada. Given they’re all quite different, I’ll be doing a separate post on each one. I think the mojito ones were my favourite so I’m going to start with them
Chocolate Autumn Leaf Biscuits

Ok, so these aren’t cupcakes but they were meant to go on top of some cupcakes. However, there seems to be a baking powder shortage. The Co-op at the of the road has stopped stocking baking powder (how ridiculous is that?!) so I thought that I would be able to get some from Sainsburys but similarly it has stopped stocking it and only had individual 30g sachets…. which, yep you guessed, were sold out! Forth supermarket later and I still hadn’t managed to find any – I think somebody is trying to stop me making so many cupcakes!! So I decided to give up on the cupcake idea and just go with the cookies but next time I find some in the supermarket (if anywhere still stocks it) I will be buying at least 10 pots of it so that this cannot happen again. Hot Chocolate Cupcakes

As I mentioned in my previous post I couldn’t decide what flavour cupcakes to make for the Big Brew Up so I made two flavours! I’d faffed around for quite a while trying to make the spirals to go on top of the toffee apple cupcakes so I didn’t have much time so I wanted to do something fairly simple. I also wanted to do something which fitted in with the big brew up theme – so I decided to make “hot chocolate cupcakes”. For a change, I kept the decoration for these ones simple i.e. I just did a swirl of buttercream!

I discovered on Friday last week that there was going to be a cake sale in the office on Monday. Sadly I was away all weekend and didn’t get back until Monday lunchtime. Well, I wasn’t really that sad given that I went to Germany to see Tom! However, I didn’t want to miss out on an opportunity to make some cakes for charity and since the Big Brew Up is happening all week I decided to make some last night! Chocolate Daisy Cupcakes

The other flavour cupcake which I make fairly regularly is chocolate! Again, my usual recipe is from The Hummingbird Bakery Cake Days book – as I’ve said before, they’re simple to make, they always come out perfectly and I know they taste good! I made these daisy ones for a charity cake sale in the office last week to raise money for Emily’s Big Walk – I always look for excuses to make cakes (especially if it’s for a good cause) so when an email came round about a cake sale I volunteered to make some. Butterfly Cupcakes
So, what should I do for my first post?! I guess I should start with something simple! The cupcakes I probably make most often are plain vanilla or chocolate – usually because they always go down well and they’re quick and easy to make, giving me plenty of time to decorate them! My favourite recipes are from The Hummingbird Bakery Cake Days book – they’re simple to make, they always come out perfectly and I know they taste good! And the decoration I’ve made the most? Probably these chocolate flutterbies. Although I’ve only made them four times – I like trying new things!
