Rubber Duck Cupcakes

After a lot of indecisiveness (usually the case if I haven’t already got a plan about what I’m making!) I decided to make some rubber duck cupcakes for the cake trolley the other week. I had plenty of sugar paste left from cakes I’ve made over the last few weeks so some simple decorations to use it up seemed like a good option. Click here to see the rubber ducks!

Last weekend I visited my sister-in-law Tams and her hubby Pete, they got married and bought a house together last year and this was our 1st visit, so I thought it would be a nice idea to make some ‘new home’ cupcakes. IMG_3011Last weekend it definitely felt like spring had arrived. We’d also had some lovely sunny days at the start of the week so I couldn’t resist making some spring cupcakes but after I made these on Wednesday evening the weather suddenly changed – I woke up on Thursday morning to see it was snowing! IMG_2968In my office there is a cake trolley every Friday for charity – the charity changes each month. February’s cake trolleys were to raise money for Maggie’s Centre in Newcastle – Maggie’s offers free practical, emotional and social support to people with cancer and their families and friends. Until last week I’d been busy every Friday in February making cakes for other people. So last Friday was the first week I was able to bake something for the trolley and I wanted to make something slightly different so on Thursday night this little piggy stayed home and made these piggy-themed cupcakes!

Last weekend was another cross country race and that gave me another excuse to try out a recipe I haven’t done before and experiment with the decorating. I chose stem ginger cupcake as I wanted a flavour that would be warming in this cold weather, also I hadn’t made them before so it was good to tick off another recipe from the long list! I struggled a bit to think of something to theme the cupcakes with as this time of year seems to be quite uneventful, unlike Christmas. So I chose to make some cows and daisies that could incorporate a subtle red and yellow theme – by using red and yellow centers for the daisies – Serpentine running club colours.
