One of Rich’s favourite treats is rocky road, we even had the bottom tier of our wedding cake made from rocky road! So making a Christmas version would definitely be popular in our house. I cut this recipe out of Olive Magazine last Christmas but never got round to making it, so this year when I was looking through my recipes I added this one to the list. Click here to give this a go.

I’ve been desperate to do some Christmas baking, but haven’t found much time with Christmas prep and having a 3 year old a new born baby! So this week while Emily was at nursery I made some time to try a few new Christmas recipes. This one looked nice and easy and perfect as a Christmas pressie for Emily’s hard working nursery staff along with a few other goodies. And of course a few slices for us too! For Father’s Day this year, I decided to bake my dad a present – Amaretto brownies. Since I wasn’t going to see him on the Sunday, I gave them to him, freshly baked, on the Saturday. The plan was that he wouldn’t eat them until Father’s Day, but the temptation was too great and he couldn’t wait. He said he’d just have one, but after he’d eaten it, he decided one just wasn’t enough so had a second… after that my mum decided to ration them!

Later this year I’ll be making my sister’s wedding cake. She wants one of the layers to be a chocolate biscuit cake, so, as a trial run, I decided to make a couple of the layers of her 30th birthday cake as chocolate biscuit cake. I wanted to try two very different recipes to see how they tasted and how easy they were to marzipan and ice. My mum made the top layer – it was a very rich, fruity, and slightly alcoholic chocolate biscuit cake. I made the middle layer – a biscuit cake which was more similar to rocky road. I love trying new things and I have loads Christmassy things which I want to try to make. I have made these every year for the last few years so I nearly didn’t make them. But then I remembered how much everybody loved them and how easy they were to make so I decided I would. They are just chocolate brownies, rolled into balls and then decorated to look like mini Christmas puddings! If you want to have a go a making them click here.
