These are slightly out of date now given I made them during the Wimbledon fortnight but given its still summer/tennis season, I think they’re still relevant. Golf Cake

His favourite cake of mine is the bunny cake I made at Easter this year (it’s also my favourite) but Nic wanted something golf related. Tour de France Cupcakes

My Uncle Pe-pe is currently cycling from John O’Groats to Land’s End with his brother-in-law Tim. He’s not going at quite the same speed as the Tour de France but then he’s not a cyclist, they’re not having any rest days and they don’t have a support crew following them so they are cycling with all their kit and camping, so he’s doing an amazing job! Rather than just donating, I decided to use a tiny amount of the money I was going to donate (less than £5) to make some cakes to raise a bit more money… and that’s when I came up with these cupcakes. Amaretto Brownies

20130715-215317.jpgFor Father’s Day this year, I decided to bake my dad a present – Amaretto brownies. Since I wasn’t going to see him on the Sunday, I gave them to him, freshly baked, on the Saturday. The plan was that he wouldn’t eat them until Father’s Day, but the temptation was too great and he couldn’t wait. He said he’d just have one, but after he’d eaten it, he decided one just wasn’t enough so had a second… after that my mum decided to ration them!

Sunflower Cupcakes

20130615-145332.jpg A few weeks ago it was pointed out to me that I hadn’t done much baking for the office. I also realised I hadn’t bought anything back from holiday with me. So I decided to make some cupcakes to take into the office. Since the weather had been pretty rubbish, I thought some sunflower cupcakes might help bring the sun out… and they did! Bourbon Biscuit Cupcakes

photo (99)When I came up with the idea of making a selection of “party biscuit” cupcakes, there wasn’t a recipe for Bourbon biscuit cupcakes in the new Hummingbird Bakery book so I decided to come up with a recipe myself. I couldn’t remember the last time I had a Bourbon biscuit so I had to buy a packet so I could taste them to remind myself what they were like! After tasting a couple, Tom and I decided that the biscuits themselves were pretty flavourless, it was the buttercream sandwiching them together which had the chocolate flavour. I debated for a long time whether or not I should get it – I have a large collection of baking books and I’ve only made a fraction of the recipes in them, so do I really need any more? I decided yes. Welsh Birthday Cake

OLYMPUS DIGITAL CAMERALast year I made my friend Ro a birthday cake. It was huge. So, this year when she invited me to her 30th birthday celebrations, I asked her if I could make her a giant birthday cake again. Her response was “that is possibly the silliest question I’ve ever heard”. In the end though, it wasn’t as big as the previous year – I think it would have been hard to beat it! Knitting Cupcakes

imageLast weekend it was my Grandma’s birthday. She loves knitting so when I saw these in one of the Hello Cupcake! books I knew I had to make them for her. I thought they would be fairly quick to make and decorate, and they were. However, I didn’t quite leave enough time for th cakes to cool down before I had to ice them so I ended up icing them while they were still warm – not something I would recommend!
