Time for GBBO technical challenge number 2! I love Viennese whirls, the biscuits just melt in your mouth, so I was really pleased with this weeks challenge. I have made them before, but probably about 10 years ago, so it’s nice to give them a go again. Click  here to find out how I got on.

This year I haven’t had time to bake a big cake, so I decided to make a couple of batches of cupcakes –  some for our family trip this weekend and some for the local baby group I go to on a Thursday morning. I hadn’t managed to go shopping this week, so I had to pick a flavour that had only store cupboard ingredients in – I really struggled, but found that Earl Grey tea cupcakes were the same as the vanilla ones and the only extra ingredients were a few tea bags. Last weekend we had a Reunion/ Christmas get together with our NCT friends, which we offered to host. Baking with a 7 week old baby is challenging, but I was desperate to bake something Christmassy and fun!   I chose a design that could be done in stages so I could fit it in around looking after little Emily. I was really excited about patisserie week – I was hoping that the technical challenge would be something pretty and I wasn’t disappointed! Although these involved making various types of icings, which looked complicated and quite different to what I normally make, they turned out to be easier than I expected. IMG_3067The other week I realised it had been a while since I’d baked for the office so I decided I should bake something to take in. I wanted to make something quick and simple, which only needed store cupboard ingredients since I didn’t want to go out to the supermarket, so I decided to make some cookies. After a flick through some of my recipe books I came across these in the Hairy Bikers Big Book of Baking. Despite having to make the caramel to go in them, they’re straightforward (and quick) to make. Need a quick sugar fix?

sticky toffee cupcakes

I’ve been wanting to make these cupcakes for ages and they were definitely worth the wait. The caramel cream cheese buttercream is probably one of the best buttercreams I’ve tasted for a while – the texture was so smooth and silky and it had just the right sweetness. red nose jammy bodgerLast week I saw an email about a cake sale in the office today for Comic Relief so sent an email to say I’d bake something to sell. I then discovered there was a bake off too so I thought if I was going to bake something to sell I might as well enter it into the competition. There were various categories to enter so I decided I would make cupcakes and enter the cupcake and showstopper categories and then if I had time I would bake something for the biscuit category. I managed to finish work slightly early so I had plenty of time while the cupcakes were cooling. Choosing which biscuits to make was pretty easy – for Red Nose Day there’s only one type of biscuit which is suitable… Red Nose Jammy Bodgers!

dinosaurA few weeks ago at work, David asked if I’d make a cake for his son’s birthday. Given how much he likes cake, my initial thought that it was probably for him rather than his son. And the more he told me, the more I thought that was the case – he asked for the cake to be 2 different flavours, one of which was his favourtite cake (carrot) and he then added that his son doesn’t even really like cake!
