I wanted to make two fruity cocktails and two non-fruity so after asking a few people for suggestions, I decided on White Russian as one of the non-fruity ones. I don’t think I’ve ever had it before as a cocktail but it sounded good to me in cupcake form! I did a quick google search and came across a recipe on Baked Perfection. Ok, so these aren’t cupcakes but they were meant to go on top of some cupcakes. However, there seems to be a baking powder shortage. The Co-op at the of the road has stopped stocking baking powder (how ridiculous is that?!) so I thought that I would be able to get some from Sainsburys but similarly it has stopped stocking it and only had individual 30g sachets…. which, yep you guessed, were sold out! Forth supermarket later and I still hadn’t managed to find any – I think somebody is trying to stop me making so many cupcakes!! So I decided to give up on the cupcake idea and just go with the cookies but next time I find some in the supermarket (if anywhere still stocks it) I will be buying at least 10 pots of it so that this cannot happen again. I’ve been trying to think of events which are coming up soon, which I can make cupcakes for. The obvious ones came to mind – Halloween, bonfire night, birthdays etc. Most of the cupcakes I make end up at work, mainly because I can’t eat a whole batch myself so if I want to try a new recipe I might as well take them in! This week, it’s the last day before one of the girls I work with, Laura, goes on maternity leave. This occurred to me at the weekend on the train home and I started thinking of loads of “baby” related cupcakes. However, this week has been really busy at work so I had no time to make any decorations in advance so I actually didn’t get to make any of the decorations I thought of 😦 I guess they’ll have to wait until the next person leaves to go on maternity leave!

Maybe that’s not completely true but if you don’t like cake then there’s something wrong with you! This weekend I went down to London to stay with my oldest friends (not oldest as in they’re really old but oldest as in we’ve been friends for as long as I can remember!) – Nic and Sian. Nic was cooking dinner for us on the Friday night so I offered to bring a pudding, and since it was Sian’s birthday on Sunday, I decided to make some cupcakes as a kind of birthday cake!

As I mentioned in my previous post I couldn’t decide what flavour cupcakes to make for the Big Brew Up so I made two flavours! I’d faffed around for quite a while trying to make the spirals to go on top of the toffee apple cupcakes so I didn’t have much time so I wanted to do something fairly simple. I also wanted to do something which fitted in with the big brew up theme – so I decided to make “hot chocolate cupcakes”. For a change, I kept the decoration for these ones simple i.e. I just did a swirl of buttercream!

The other flavour cupcake which I make fairly regularly is chocolate! Again, my usual recipe is from The Hummingbird Bakery Cake Days book – as I’ve said before, they’re simple to make, they always come out perfectly and I know they taste good! I made these daisy ones for a charity cake sale in the office last week to raise money for Emily’s Big Walk – I always look for excuses to make cakes (especially if it’s for a good cause) so when an email came round about a cake sale I volunteered to make some. Butterfly Cupcakes

So, what should I do for my first post?! I guess I should start with something simple! The cupcakes I probably make most often are plain vanilla or chocolate – usually because they always go down well and they’re quick and easy to make, giving me plenty of time to decorate them! My favourite recipes are from The Hummingbird Bakery Cake Days book – they’re simple to make, they always come out perfectly and I know they taste good! And the decoration I’ve made the most? Probably these chocolate flutterbies. Although I’ve only made them four times – I like trying new things!
