
Last week the weather suddenly changed and it started to feel like autumn. It was also National Cupcake Week. So you can probably guess what I did at the weekend…. I made some autumn-themed cupcakes!

At the moment I’m in the process of moving house. This means that we don’t have any internet yet. I’m therefore slightly restricted with what I can blog about at the moment – I can only post things which I’ve taken photos of on my phone. I was planning on writing my next one on the red velvet wedding cake which I made several weeks ago for one of my best friends, Nic. 4 years ago two of my old house mates got engaged, they called me up to tell me the exciting news and asked if I would like to make their wedding cake. How could I refuse! I’d never made a wedding cake before so when Chloe suggested a design she liked I spent some time getting advise on how to do it, it wasn’t just a straight forward 3 tier cake. Under the Sea Cupcakes

Every year the company I work for takes part in the Enduro Challenge. This is an endurance relay event where a team of 6 athletes race from Tower to Tower – The Tower of London to The Eiffel Tower. Teams run from London to Dover, swim across the English Channel (in only a swimming costume!) and then cycle from Calais to Paris. Yes, this is an extreme triathlon! I’ve taken part a couple of times and have helped support the race the last few years too. It’s an enormous amount of fun and incredibly hard work and the athletes that take part are thoroughly deserving of plenty of homemade cakes! So it has become a tradition that I supply some home baked goodies, preferably themed for the event. So this year I have been busy baking some sea creature cupcakes.

Kids birthday cakes are one of my favourite cakes to make, especially when I get to come up with the design myself. As much as I love making pretty wedding cakes or cupcakes, there is something so fun about making bright, bold decorations for kids/novelty cakes – they are simple to make but always look so effective. So I was really pleased when Nadeem asked if I was able to make a transport themed birthday cake for his son Zahi’s second birthday. Want to find out where the train is heading?

I like all kinds of baking and cake decorating and I love being asked to make anything, but after 3 minions, 2 pandas, and a sooty cake, it made a nice change to be asked to make some pretty cupcakes. I also like being given the opportunity to come up with the decorations myself – the only instructions I was given for these was that they had to be purple and silver with flowers and butterflies. Panda Cake

I have always loved pandas. There’s something about them that makes them adorable. Many years ago my mum made me a panda cake for my birthday but despite my love of both pandas and cakes I’ve never made a panda cake myself. I decided it was time to change that. So this year I decided to make myself a panda cake for my birthday. My birthday was on a Monday and the weekend before I’d been trying out different red velvet cakes with my friend Nic to find the best recipe to use for her wedding cake, so it seemed sensible to use the left over cakes to create my own birthday cake. With hindsight, this probably wasn’t the best idea – it’s distressing enough cutting up a panda cake, but when it’s red on the inside… I’m still recovering from the traumatic experience. Ice Climbing Wedding Cake

I love being asked to make cakes. But I love it even more when I get asked to make something that I haven’t made before, especially if it’s going to be a challenge. So I was pretty excited when Tom’s brother, Rem, asked if I would make his wedding cake. Of course I said yes, and came up with some suggestions. I gave them some traditional ideas but knowing that they both like rock climbing I said they could have something a bit alternative. I sent them a few photos of ideas and was pleased when they went with the ice climbing one – the white made it look more like a wedding cake than some of the other ones I found. Minion Birthday Cake

Last weekend was an epic baking weekend – I managed to make four cakes and a batch of cupcakes. I’m still not entirely sure how I fitted it all. Especially since I had a cake disaster – my first one ever. I guess I was due one! I still don’t know what went wrong, but a sponge cake exploded – it was like a volcano. We tried a bit and it tasted like vanilla sponge should so I’m completely baffled. But anyway, back to the minion…
