happy birthday cupcakes

Last week the other batch of cupcakes I made were these – happy birthday ones for Sarah. These weren’t what I intended to make but I didn’t have the ingredients I needed for the decoration and Tom had gone out for the night with our only set of house keys so I couldn’t leave the house! In the end, I was pretty pleased with them and I think Sarah enjoyed them too (even if we were all completely stuffed have eaten a massive curry just before!).

close up salted caramel profiteroles

Happy New Year! Last night Tom and I decided that we would have a quiet new year’s eve with just the 2 of us – Tom made the cocktails and I made the food. For pudding I made these: salted caramel profiteroles.

I haven’t made profiteroles, or choux pastry, for a while and it wasn’t as tricky as I remember. I made them the night before and then assembled them and made the chocolate sauce just before I served them – I’d had a few cocktails by that point but luckily it was fairly straight forward!

If you make a whole batch of brownies and don’t want to turn them all into reindeer, what do you do with the rest of the brownies? Eat them? Or if you’ve eaten too many already there is another option.  Turn them into snowmen cake pops!

Say hello to Rudolph. And his brothers. When I saw these in several places on the internet I just had to make them! And they looked so cute when they were finished that I could quite easily have gobbled them all up myself. But since they’re meant to be presents for people I had to resist. They did go through quality control a couple of times though, which Tom, in the role of chief taste tester appreciated. Do you want to make Rudolph and his friends too? Yes I do!

Here’s the next creation ticked off my Christmas baking list – Reindeer cupcakes. I saw these in What’s New Cupcake and I wanted to make them straight away, but making them in the middle of summer wouldn’t really have been appropriate. So I had to wait. I’ve actually made them already this year – when my sister came to stay a couple of weeks ago we invited the family over for coffee and cake on Sunday morning so these were one of the things we made then. We even made a gingerbread sleigh and a Santa cupcake to go with it – I didn’t have time to make all of that last night though! Do you want to make Rudolph and his friends?

I love trying new things and I have loads Christmassy things which I want to try to make. I have made these every year for the last few years so I nearly didn’t make them. But then I remembered how much everybody loved them and how easy they were to make so I decided I would. They are just chocolate brownies, rolled into balls and then decorated to look like mini Christmas puddings! If you want to have a go a making them click here.

Toffee Bars

These are possibly my favourite bar cookies – they are so simple to make and they are really moreish! They are essentially a simplified version of millionaires shortbread/caramel slice: the caramel and shortbread is combined in one layer. If you like millionaires shortbread you’ll love these.

Toblerone Cupcakes

In the office, if you go on holiday you’re meant to bring back “goodies” from wherever you go. On Thursday I headed over to Germany to see Tom and then as a surprise took him to Prague for the weekend for his 30th birthday! I’ve been away for nearly a week and I left the country so in theory I should probably have brought something back. However, I didn’t. Instead, I made these Toblerone cupcakes with a giant Toblerone which technically I didn’t even buy – Tom bought me the weekend before when he came back home! This weekend I decided to have a cooking weekend – I did a  roast chicken, made two different types of soup, baked muffins for breakfast, made the Christmas cake, baked and (half) decorated some Halloween cookies, and I also made these… chocolate orange pumpkin cupcakes.
