Sometimes simple is best – and when you’re short on time, it always is. I know that it I can get a batch of cupcakes made and iced with buttercream in just over an hour. However, I usually underestimate how long decorations take to make. These snowflakes though are super quick to make, and anybody can make them since the only skills required are being able to roll fondant icing out and use a plunger cutter.

photo 2 (2)Last week I offered to do some baking for a cake trolley in the office to raise money for Sands (the Stillbirth and Neonatal Death Charity). The day before I wasn’t feeling 100% so I probably should have said that I could no longer make them, especially since I hadn’t even decided what I was going to make. However, I’m not that sensible so I didn’t say anything and ended up making these cute little penguins.

I love a bit of Christmas baking, last year I worked my way through the cupcake recipes from the Hummingbird Bakery Cake Days book. I love the fruit cake cupcakes, the recipe is light and delicious and still has that lovely boozy fruit cake flavour. I thought these snowmen were pretty cool and as my hubby is a massive marshmallow fan I knew these would be a winner! Click here to find out how to build a snowman cupcake.

Owl Cupcakes

Since discovering that we have tawny owls living in the woods near us, I have found a new love for these gorgeous birds. They make the most amazing mystical “twit twoo” sound which we hear most evenings. So it seems very appropriate to blog about these cute little owl cupcakes. Click here to find out how to make them.

IMG_2702For the last few years Becky has done lots of baking for her running club and always tries to make the baking in the running club colours – red and yellow.  So when Tom joined a hockey club up here I decided I would start doing some team-colour themed baking for him. His hockey team, JPC HC, plays in blue and yellow and the first thing that came into my mind was minions – I’ve clearly made too many minion cakes! Is it possible to make too many minions?

You can’t have a birthday celebration without cake, and given I was staying with Becky on the Friday night I offered to make her something. This week is national cupcake week, possibly the best week of the year! I have been baking lots of cupcakes recently in particular for the hen parties I have been to this month. The 1st of 3 hen parties was for my lovely friend Anna who I met through our running club, she is getting married at the end of the month (look out for the blog about her wedding cake next month). I decided to do something different for her cupcakes rather than making the usual silly rude ones.
