Acorn Cupcakes

Autumn has definitely arrived – we’ve had a couple of mornings with frost, some very wet weather and the pavements are starting to get covered in leaves. So for the first cross-country race of the season a few weeks ago I decided to make some autumn-themed cupcakes for after the race. On the day of the race, it was actually extremely mild – not like a typical cross-country race day – which made a nice change! I also really enjoyed the race. The course was great – undulating with a few muddy sections and a water jump (which was my favourite bit – it helped to cool me down!) Click here to keep reading.

It must be time for another blackberry recipe! I haven’t baked any cupcakes for a while, so thought I would make some seasonal ones. I made some chocolate cherry ones a few months ago and liked the idea of combining dark chocolate with the fruit. I also love the colour from the blackberries so added a blackberry puree to the buttercream, to give a pretty pinky purple colour. I also used the left over blackberry and white chocolate ganache to put in the middle of the cupcakes – delicious! Click here to have a go at the recipe.

Rubber Duck Cupcakes

After a lot of indecisiveness (usually the case if I haven’t already got a plan about what I’m making!) I decided to make some rubber duck cupcakes for the cake trolley the other week. I had plenty of sugar paste left from cakes I’ve made over the last few weeks so some simple decorations to use it up seemed like a good option. Click here to see the rubber ducks!

Last weekend I visited my sister-in-law Tams and her hubby Pete, they got married and bought a house together last year and this was our 1st visit, so I thought it would be a nice idea to make some ‘new home’ cupcakes. I chose a yummy looking chocolate cherry cupcake recipe to try out. Click here to see what I baked.

IMG_3011Last weekend it definitely felt like spring had arrived. We’d also had some lovely sunny days at the start of the week so I couldn’t resist making some spring cupcakes but after I made these on Wednesday evening the weather suddenly changed – I woke up on Thursday morning to see it was snowing! However, these little birdies definitely helped to brighten the day. “Chirp chirp, tweet tweet, chirp…” I mean click here to keep reading.

IMG_2968In my office there is a cake trolley every Friday for charity – the charity changes each month. February’s cake trolleys were to raise money for Maggie’s Centre in Newcastle – Maggie’s offers free practical, emotional and social support to people with cancer and their families and friends. Until last week I’d been busy every Friday in February making cakes for other people. So last Friday was the first week I was able to bake something for the trolley and I wanted to make something slightly different so on Thursday night this little piggy stayed home and made these piggy-themed cupcakes!

Just before Christmas I was very excited to be asked to be a God Mother and also excited about being asked to do the Christening cake. The top tier of Matt and Beckie’s wedding cake had been stored for a couple of years, so I spent a few weeks feeding it with brandy before decorating it. I love the grey and yellow elephant theme they chose and had been asked to do a similar themed baby shower cake for the week before, you can see the cake here. They also requested some matching cupcakes, read on to find out more about these cute elephant cakes.

One of the things I love about baking is seeing people enjoying eating my baked goodies. The most appreciative bunch of people has to be hungry runners from my running club after a cross country race! Click here to see the red and yellow cupcakes I have made.
