On Sunday it was the Bupa Great Birmingham Run. One of the guys I work with, Adam, was running so I decided to make some cupcakes to raise some money for the charity he was running for – Birmingham Children’s Hospital. I was going to make some running themed cupcakes but his nickname in the office is “Sherlock” (because he looks a bit like Benedict Cumberbatch), so I decided to make some Sherlock Holmes cupcakes. A few weeks ago I wanted to make some cupcakes to take over to my friend Jen’s for her mini “hen weekend”. They needed to be suitable girly but I didn’t have a huge amount of time to make and decorate them. So I decided to make these – inspired by some my sister made for a hen do! It’s been a while since I last did a post. It’s not that I haven’t baked anything, it’s more the fact that Tom came home – despite the fact he seems to be working constantly I suddenly have less free time! Anyway, I made this cake last weekend, with my sister. It was for our great Aunt’s 90th birthday – happy birthday Auntie Joan! We didn’t want to do just a plain sponge so the cake was lemon & poppy seed with a raspberry curd filling and a lemon buttercream – it was very light and delicious. Click here to keep reading.
Tennis Ball (Wimbledon) Cupcakes

I seem to have made a lot of things over the last couple of months, but not really blogged much… so I think it’s time to catch up with some of the things I’ve made! These are slightly out of date now given I made them during the Wimbledon fortnight but given its still summer/tennis season, I think they’re still relevant. Want a snack to keep you going while you’re playing tennis?

A few weeks ago it was pointed out to me that I hadn’t done much baking for the office. I also realised I hadn’t bought anything back from holiday with me. So I decided to make some cupcakes to take into the office. Since the weather had been pretty rubbish, I thought some sunflower cupcakes might help bring the sun out… and they did! Maybe only for a week but it was better than more rain. If you want some sunshine keep reading.

Last year I made my friend Ro a birthday cake. It was huge. So, this year when she invited me to her 30th birthday celebrations, I asked her if I could make her a giant birthday cake again. Her response was “that is possibly the silliest question I’ve ever heard”. In the end though, it wasn’t as big as the previous year – I think it would have been hard to beat it! I wanted to make some cupcakes which looked amazing for the bake off in the office yesterday to enter into the showstopper category. I’d looked through my Hello Cupcake book on Monday night but nothing jumped out so I asked Bertie in the office for ideas – she said I should make “the bear”… I think she was getting mixed up with Children in Need! But it did give me the idea of making Red Noses. This year’s noses are pretty cool and even have feet (they’re meant to be “di-nose-saurs”) but I decided making them 100% identical would take too long given I had other stuff to bake too, so I took the simplest one and based it on that. Last week I saw an email about a cake sale in the office today for Comic Relief so sent an email to say I’d bake something to sell. I then discovered there was a bake off too so I thought if I was going to bake something to sell I might as well enter it into the competition. There were various categories to enter so I decided I would make cupcakes and enter the cupcake and showstopper categories and then if I had time I would bake something for the biscuit category. I managed to finish work slightly early so I had plenty of time while the cupcakes were cooling. Choosing which biscuits to make was pretty easy – for Red Nose Day there’s only one type of biscuit which is suitable… Red Nose Jammy Bodgers!

Last week I had a week from hell at work – 60 hours worth of hell. However, I’d agreed a while ago to make these cakes for a friend in the office. I didn’t want to let her down so last Thursday evening I somehow managed to fit in making them. They had to be pastel pinks, purples and white, some with 21’s on, some with Jodie’s on and some with both on so I came up with a design I wanted to do. However, I was too tired to make them exactly as planned – I guess I’ll just have to save that design for another time.
Salted Caramel Profiteroles

Happy New Year! Last night Tom and I decided that we would have a quiet new year’s eve with just the 2 of us – Tom made the cocktails and I made the food. For pudding I made these: salted caramel profiteroles.
I haven’t made profiteroles, or choux pastry, for a while and it wasn’t as tricky as I remember. I made them the night before and then assembled them and made the chocolate sauce just before I served them – I’d had a few cocktails by that point but luckily it was fairly straight forward!
