Last year was a bumper year for blackberries, I’m lucky enough to be surrounded by beautiful countryside in Kent and plenty of hedgerows filled with blackberries. I think I picked around 20kg last year and really enjoyed trying all sorts of recipes to use them up. I’ve been out a couple of times this year so it’s time to start making some goodies from all of my pickings. I found a recipe for walnut biscuits and adapted it to sandwich the biscuits together with a yummy blackberry and white chocolate ganache. Click here to try this lovely recipe.

I was intrigued about this weeks technical challenge. It didn’t seem to bear any resemblance to anything I’d made in the past. It certainly wasn’t like any pastry recipes I’d tried. I can see why the bakers got confused – it felt like it belonged in bread week rather than pastry week! What to know what a flaouna is?

P1200517I bake quite a lot of gluten-free cakes for my running club as there are several people that follow a gluten-free diet, so I was interested to see what this week challenge would be. When I saw that it was bread, all I could think about were the horrible gluten-free flat breads I had tried to make a few years ago, which were like cardboard! IMG_0229Just before Christmas last year, a family friend, Emma, asked if I would be able to make her wedding cake. Despite not living near where the wedding was going to be I said yes since it was near my parents so I thought it would be a good chance to go back to my parents for a few days. However, that didn’t happen – instead mum, dad and Becky came up to stay with me for a few days and then took the cake back. Becky even assembled the cake for me! Click here to keep reading.

It looked impressive but I couldn’t help thinking that it looked like a pavlova, just constructed in a slightly different way. P1200438On the Great British Bake Off last week, it was bread week. The technical challenge was to make 4 baguettes. I do bake my own bread, but not as often as I would like to and I usually end up making a white, wholemeal or granary loaf for the weekend and to put in the freezer. I bought Paul Hollywoods book ‘How to Bake’ a few months ago and I have made a few things from it, with varying success! So my bread making experience is fairly limited. But I love a challenge and really enjoy trying out new things, so click here to find out how I got on.

Last night, was my last opportunity to try the technical GBBO challenge before this week’s bake off. So, I decided to give it a go. I read through the recipe a few times before I started and it didn’t seem that difficult, just quite time consuming. However, they turned out to be trickier than I thought, even with the full instructions (which seemed half complete to me so I don’t know what the contestants got given)! Last year we tried to make a few of the technical challenges, but we ran out of time, so this year between the two of us, we are hoping to attempt most of them.
