Hopefully this will be the first of many Christmas baking blogs this year and as usual there are so many scrummy looking recipes to try out it’s going to be hard to narrow it down. As it’s the last Met League before Christmas I couldn’t resist making some red and gold Christmas cupcakes for the Serpie runners. We haven’t been to any xc races yet this season as we now live quite far away and Rich injured his knee recently which has meant he can’t run at the moment. But after 4 years of not being able to run because of a back injury, I am now able to run 6km so I am very excited to be able to take part! Click  here to try out our first Christmas recipe.

OLYMPUS DIGITAL CAMERAIt was our parents 40th wedding anniversary on the 30th July so not surprisingly Em and I decided to make them a cake as a present! Celebrating 40 years of marriage is a wonderful occasion, so it had to be a very special cake for two very special people. A couple of weeks ago my friends James and Amelia got married and I was thrilled to be asked to make their wedding cake for them. It’s great to be asked to make a cake that’s completely different from anything I’ve done before, so I was very excited when James and Amelia found a photo of a silhouette wedding cake that they really liked. The best way to use up left over cake decorations is to do some more baking! I have a pot filled with left over flowers of various shapes, sizes and colours, so I picked out these ones to create some elegant biscuits! I usually use a biscuit recipe from the Biscuiteers Book of Iced Biscuits as they are always tasty and have the perfect texture. Click  here to try their vanilla biscuit recipe.

p1240155This year I have been slightly more organised than last year and managed to make and decorate my Christmas cake on time! I wanted to try something different and designed a cake with quilled snowflakes. We learned how to quill icing on our Squires cake course last year, a technique I had never done before. It’s quite therapeutic and fun to create different shapes and fit them all together. Click  here to see my snowflake designs.

As usual I am baking for Serpentine Running Club for the last cross country race before Christmas, so it seemed fitting to make something Christmas theme and in red and gold – the clubs colours. I love the Hummingbird Bakery Christmas cupcake recipe, it has got all the flavours of a Christmas cake, but its lovely and light and is topped with scrummy almond butter cream. A couple of months ago I made my first wedding cake of 2016 and the first since little Emily arrived. The design that Helen and Nick came up with was quite dramatic and worked beautifully with the theme of their wedding. Helen is English, so the cake had some large red roses and Nick is from New Zealand, so some ferns were also included in the design. Click here to see some more pics of this stand out cake.

I’ve always wanted to have a go at making fondant fancies and a few weeks ago it was my friend Karen’s 30th Birthday and all the food for the party was kids party themed, so this was the perfect opportunity to give them a go. I definitely need a lot more practise as they aren’t the easiest thing to make, but I had a bit of fun trying them out. The party food was great –  I can’t remember the last time I had Skips or cheese and pineapple on sticks – amazing! Click here for the recipe.
