We were really looking forward to dessert week on the Bake Off, especially having seen the clip the week before showing the very limited instructions for making a lemon meringue pie. I honestly don’t think I have ever made a lemon meringue pie before, but I’ve made plenty of pastry, curd and meringue, so I was hoping it was going to be fairly straightforward. It’s suddenly started feeling very autumnal! My favourite time of year, I’m definitely looking forward to making more comfort food dinners and bakes. I volunteered to make some Christmas cupcakes for Emily’s Rainbow’s group for their final session of the year as they were having a Christmas party. Christmas cakes are my favourite type of cake to decorate, it’s how Em and I first got into cake decorating when we were little. We always used to choose a design and have a go at making it.
