We’ve had a really busy couple of months with various wedding cakes and visiting friends and family, so I made the most of a quiet 20 mins earlier while Emily was watching Stickman to write about the cupcakes I made for everyone when we visited friends this weekend. The wedding cake I made a couple of weeks ago had 2 tiers of coffee cake in and I tried a Hummingbird recipe that sounded like it would give an amazing coffee hit. It’s been a while since I made some cupcakes, especially ones that were an usual flavour and not just vanilla/chocolate with decorations on. So when I decided to go down to London for the afternoon to meet my best friend’s baby, I offered to make some cupcakes to take. I’ve already got a lot of rhubarb (I’ve made rhubarb and raspberry Frangipane tart, rhubarb crumble muffins, and I still have about 750g left!) so I decided to bake something with rhubarb. Hopefully this will be the first of many Christmas baking blogs this year and as usual there are so many scrummy looking recipes to try out it’s going to be hard to narrow it down. As it’s the last Met League before Christmas I couldn’t resist making some red and gold Christmas cupcakes for the Serpie runners. We haven’t been to any xc races yet this season as we now live quite far away and Rich injured his knee recently which has meant he can’t run at the moment. But after 4 years of not being able to run because of a back injury, I am now able to run 6km so I am very excited to be able to take part! Click  here to try out our first Christmas recipe.

A couple of weeks ago I made some cakes to take down to the Leeds office when I went for the day. Given it was December I decided that I should make something Christmassy. I hadn’t been food shopping so I was limited with what flavour I could make so just went with vanilla. As usual I am baking for Serpentine Running Club for the last cross country race before Christmas, so it seemed fitting to make something Christmas theme and in red and gold – the clubs colours. I love the Hummingbird Bakery Christmas cupcake recipe, it has got all the flavours of a Christmas cake, but its lovely and light and is topped with scrummy almond butter cream. Partly because of the Olympics (why do most of the finals have to be in the middle of the night?!) and partly due to being at a hen do last weekend for one of my friends, Sian. These Olympic themed cupcakes were for Sian’s hen do. We had a mini Olympics during the day on Saturday so I decided that some themed cupcakes would help re-fuel the athletes! IMG_3596Last week on Friday we got home from work to find a bowl full of eggs fresh on our doorstep, from our neighbours. I decided that in return for the eggs, I would bake them some cupcakes.
