A couple of weeks ago I made some cakes to take down to the Leeds office when I went for the day. Given it was December I decided that I should make something Christmassy. I hadn’t been food shopping so I was limited with what flavour I could make so just went with vanilla. As usual I am baking for Serpentine Running Club for the last cross country race before Christmas, so it seemed fitting to make something Christmas theme and in red and gold – the clubs colours. I love the Hummingbird Bakery Christmas cupcake recipe, it has got all the flavours of a Christmas cake, but its lovely and light and is topped with scrummy almond butter cream. P1230149For the last two weeks I’ve been lacking sleep. Partly because of the Olympics (why do most of the finals have to be in the middle of the night?!) and partly due to being at a hen do last weekend for one of my friends, Sian. These Olympic themed cupcakes were for Sian’s hen do. We had a mini Olympics during the day on Saturday so I decided that some themed cupcakes would help re-fuel the athletes! IMG_3596Last week on Friday we got home from work to find a bowl full of eggs fresh on our doorstep, from our neighbours. I decided that in return for the eggs, I would bake them some cupcakes. This year I haven’t had time to bake a big cake, so I decided to make a couple of batches of cupcakes –  some for our family trip this weekend and some for the local baby group I go to on a Thursday morning. I hadn’t managed to go shopping this week, so I had to pick a flavour that had only store cupboard ingredients in – I really struggled, but found that Earl Grey tea cupcakes were the same as the vanilla ones and the only extra ingredients were a few tea bags. Over the last few months, lots of my friends have had babies. Having just had a baby myself 4 months ago, I know how crazy the first few days and weeks can be. I love making presents for people and a box of cupcakes seemed perfect for any new parents – especially useful to have something to offer any visitors or for those days when things are so chaotic that all you manage to eat is a cupcake for breakfast, lunch and dinner! Last weekend we had a Reunion/ Christmas get together with our NCT friends, which we offered to host. Baking with a 7 week old baby is challenging, but I was desperate to bake something Christmassy and fun!   I chose a design that could be done in stages so I could fit it in around looking after little Emily.
