As usual I am baking for Serpentine Running Club for the last cross country race before Christmas, so it seemed fitting to make something Christmas theme and in red and gold – the clubs colours. I love the Hummingbird Bakery Christmas cupcake recipe, it has got all the flavours of a Christmas cake, but its lovely and light and is topped with scrummy almond butter cream. I can’t believe it’s nearly the end of this years bake off! One more technical challenge to go. I ended up buying the tin for this weeks challenge – you can never have too many cake tins and I am sure I will use it again as it’s a very pretty shape. It’s been a bit of a crazy week as it was Emily’s 1st Birthday last Thursdays, so I had a very important Birthday cake to make which took priority, so I am only getting round to doing this now. It’s not long till the bake off final, so only a few more weeks of technical challenges left. I’ve got a very busy few weeks, so it’s a good job that last weeks challenge was a quick and easy one! Last weeks challenge had to wait till we got back from Devon earlier this week, so I made this on Wednesday and assembled it on Thursday morning in a bit of a rush while trying to get Emily breakfast and get ready to go out. In case you missed it, the Great British Bake Off started again last week! Becky and I both really enjoyed trying the technical challenges last year so we’ve decided we’ll be doing them again this year. Last year we took it in turns to make them each week but we both decided we wanted to try the technical challenge from cake week – Jaffa Cakes!

P1230149For the last two weeks I’ve been lacking sleep. Partly because of the Olympics (why do most of the finals have to be in the middle of the night?!) and partly due to being at a hen do last weekend for one of my friends, Sian. These Olympic themed cupcakes were for Sian’s hen do. We had a mini Olympics during the day on Saturday so I decided that some themed cupcakes would help re-fuel the athletes! I’ve always wanted to have a go at making fondant fancies and a few weeks ago it was my friend Karen’s 30th Birthday and all the food for the party was kids party themed, so this was the perfect opportunity to give them a go. I definitely need a lot more practise as they aren’t the easiest thing to make, but I had a bit of fun trying them out. The party food was great –  I can’t remember the last time I had Skips or cheese and pineapple on sticks – amazing! Click here for the recipe.
