This year I really wanted to practise my piping skills, so I decided that rather than making a conventional gingerbread house I would take my inspiration from Eastern Europe. Sometimes simple is best – and when you’re short on time, it always is. I know that it I can get a batch of cupcakes made and iced with buttercream in just over an hour. However, I usually underestimate how long decorations take to make. These snowflakes though are super quick to make, and anybody can make them since the only skills required are being able to roll fondant icing out and use a plunger cutter.

Mince Pies

It’s about time we put some mince pies on the blog! If you only bake one thing this Christmas, have a go at these, they really are super, especially when they are warm straight out of the oven with a cup of tea. This recipe is from Josceline Dimbleby. This year I can’t make enough mince pies, I think I have already baked over 60, some are in the freezer ready for Christmas and the rest have been taking into the office as well as having a a few left over for an afternoon snack. I love a bit of Christmas baking, last year I worked my way through the cupcake recipes from the Hummingbird Bakery Cake Days book. I love the fruit cake cupcakes, the recipe is light and delicious and still has that lovely boozy fruit cake flavour. Barn Owl Cake

A few months ago my friend Monika asked if I would be able to make an owl Birthday cake for her husband Aaron. I did a bit of research and found a few owl cake ideas which I sent over. The majority of ideas were cartoon like owls, probably more appropriate for a kids Birthday cake. But I managed to find a realistic barn owl cake too which looked amazing, but I honestly had no idea if I could make a cake like that! So I sent Monika the links to the various cakes, I was pretty sure the realistic owl would be her favourite, and it was. Despite it looking impossibly hard to make, I really hoped she would chose this one as I have never attempted anything like this before and was keen to give it a go, but I honestly had no idea where to start! Last weekend was my sister-in-laws wedding and I couldn’t have been more excited! When we arrived at my mother-in-laws on Wednesday evening, it felt just like Christmas, with all the excitement and anticipation of the big day. There’s something really special about a family wedding. I was over the moon to be asked to do the cake and when the design was chosen I was really pleased to discover that it was something different to anything I had attempted before.

This week is national cupcake week, possibly the best week of the year! I have been baking lots of cupcakes recently in particular for the hen parties I have been to this month. The 1st of 3 hen parties was for my lovely friend Anna who I met through our running club, she is getting married at the end of the month (look out for the blog about her wedding cake next month). I decided to do something different for her cupcakes rather than making the usual silly rude ones.
