Just before Christmas last year, a family friend, Emma, asked if I would be able to make her wedding cake. Despite not living near where the wedding was going to be I said yes since it was near my parents so I thought it would be a good chance to go back to my parents for a few days. I’d never made a 100th Birthday cake before, so I was thrilled to be given the opportunity to make one. It was for our close friend’s Granny, who is called Rose, so the request for pink roses on the cake was perfect. Scones with clotted cream and British strawberries

When I went to the supermarket earlier I spotted that they had British strawberries. I refuse to buy strawberries unless they’re British since the flavour of non-British ones just isn’t as good, so when I saw these I picked up a couple of punnets. I carried on doing the weekly shop and when I got to the cream section I saw that there was one pot of clotted cream left. So I decided I was going to make some scones for afternoon tea – it was meant to be! Would you like some afternoon tea?

One of the best things about making larger cakes and unusual shaped cakes are all the off cuts! Cakes always need levelling off or shaping, so there are plenty of opportunities to do a taste test. Having made several large cakes recently I have ended up with loads of left over cake. So I have been making lots of cake pops and I now have a freezer filled with around 200 to be used and decorated at some point in the future. A few weeks ago I said that I would make an Easter cake for the office to raffle off for charity. I hadn’t decided what cake I would make so I used my usual source of inspiration – Pinterest. However, none of the Easter ideas I’d pinned last year jumped out at me so I decided to have another search. I was looking for ideas rather than something to copy completely but after I saw this cake I decided that there wasn’t much about it that I wanted to change. Is it Easter yet?!

Last year for Easter Emma and I were back at our parents for a few days, so we thought it was about time we made a mess of Mum’s kitchen and did some baking! Spring Bird Cupcakes

Last weekend it definitely felt like spring had arrived. We’d also had some lovely sunny days at the start of the week so I couldn’t resist making some spring cupcakes but after I made these on Wednesday evening the weather suddenly changed – I woke up on Thursday morning to see it was snowing! Single tier wedding cake

This wedding cake was a last minute favour for somebody at work. Luckily though, I didn’t have to make the cake, just ice and decorate an 11″ square fruit. It was a single tier cake and I loved the simplicity of the design they chose – a white cake with purple and lilac flowers around the base.
