One of the best things about making larger cakes and unusual shaped cakes are all the off cuts! Cakes always need levelling off or shaping, so there are plenty of opportunities to do a taste test. Having made several large cakes recently I have ended up with loads of left over cake. So I have been making lots of cake pops and I now have a freezer filled with around 200 to be used and decorated at some point in the future. Last weekend it definitely felt like spring had arrived. We’d also had some lovely sunny days at the start of the week so I couldn’t resist making some spring cupcakes but after I made these on Wednesday evening the weather suddenly changed – I woke up on Thursday morning to see it was snowing! However, these little birdies definitely helped to brighten the day. “Chirp chirp, tweet tweet, chirp…” I mean click here to keep reading.

4 years ago two of my old house mates got engaged, they called me up to tell me the exciting news and asked if I would like to make their wedding cake. How could I refuse! I’d never made a wedding cake before so when Chloe suggested a design she liked I spent some time getting advise on how to do it, it wasn’t just a straight forward 3 tier cake. The cake mimicked the design of her beautiful dress. Click here to see this unusual cake.

Anybody who lives in the UK will know that this summer (if you can call it that), it rained pretty much constantly. Spring seemed to just turn into autumn, with only a couple of warm sunny days in between. The bad weather is what inspired these cupcakes, so I guess something good came out of the bad weather. If you want to brighten up your day with some cupcakes, keep reading…
