Last weekend I visited my sister-in-law Tams and her hubby Pete, they got married and bought a house together last year and this was our 1st visit, so I thought it would be a nice idea to make some ‘new home’ cupcakes. Last year for Easter Emma and I were back at our parents for a few days, so we thought it was about time we made a mess of Mum’s kitchen and did some baking! We wanted to do a slightly different take on a traditional Simnel cake, and came across this yummy chocolate orange Simnel cake recipe. The decoration was another idea taken from Pinterest. IMG_2968In my office there is a cake trolley every Friday for charity – the charity changes each month. February’s cake trolleys were to raise money for Maggie’s Centre in Newcastle – Maggie’s offers free practical, emotional and social support to people with cancer and their families and friends. Until last week I’d been busy every Friday in February making cakes for other people. So last Friday was the first week I was able to bake something for the trolley and I wanted to make something slightly different so on Thursday night this little piggy stayed home and made these piggy-themed cupcakes!

Last weekend it was Emma’s 30th Birthday party. She had decided on an Alice in Wonderland theme for her party. It was fancy dress too and we had an brilliant afternoon and evening playing silly games and eating plenty of scrummy food. But no Birthday would be complete without a Birthday cake! As Emma made me an amazing surprise cake for my 30th, I had a lot to live up to, so after several months of planning I found a design that was perfect that I could adapt for her cake. Caramel Slice

Most people know this as milllionaires shortbread. However, I’ve always called it caramel slice. It reminds me of when we were younger – when we went shopping with mum in Cambridge, sometimes she would treat us to a slice of cake at a cafe called Carringtons. I would always go for their caramel slice – for me it was the perfect combination of crunchy biscuit, smooth caramel and rich chocolate. When I found out that Sunday Baking Club were having a caramel theme last weekend this is the first thing that came to mind. Having made it, I decided to have a look on Cafe Carrington’s website to see if they still do caramel slice but discovered that it went into liquidation just over a week ago. So this caramel slice is in memory of Cafe Carrington’s and all the yummy caramel slices I had over the years. Click here to get the recipe!

Sometimes simple is best – and when you’re short on time, it always is. I know that it I can get a batch of cupcakes made and iced with buttercream in just over an hour. However, I usually underestimate how long decorations take to make. These snowflakes though are super quick to make, and anybody can make them since the only skills required are being able to roll fondant icing out and use a plunger cutter.

Last weekend was my sister-in-laws wedding and I couldn’t have been more excited! When we arrived at my mother-in-laws on Wednesday evening, it felt just like Christmas, with all the excitement and anticipation of the big day. There’s something really special about a family wedding. I was over the moon to be asked to do the cake and when the design was chosen I was really pleased to discover that it was something different to anything I had attempted before.
