IMG_3596Last week on Friday we got home from work to find a bowl full of eggs fresh on our doorstep, from our neighbours. I decided that in return for the eggs, I would bake them some cupcakes. I’ve had these pinned on Pinterest for ages and decided that they were the perfect cakes to make – spring-like and quick to make. Click here to find out how to make them.

P1220325A.jpgIt must be time for some Easter baking! This year I haven’t had time to bake a big cake, so I decided to make a couple of batches of cupcakes –  some for our family trip this weekend and some for the local baby group I go to on a Thursday morning. I hadn’t managed to go shopping this week, so I had to pick a flavour that had only store cupboard ingredients in – I really struggled, but found that Earl Grey tea cupcakes were the same as the vanilla ones and the only extra ingredients were a few tea bags. Making a gingerbread house has become an annual event with my friend Anne. Each year we seem to spend more time talking and drinking tea and less time making and decorating our gingerbread! It’s great fun and hopefully we’ll be doing it for many more years to come. This year I decided to make a bird box and keep the colours simple with just white Royal icing with a few red highlights. Last weekend we had a Reunion/ Christmas get together with our NCT friends, which we offered to host. Baking with a 7 week old baby is challenging, but I was desperate to bake something Christmassy and fun!   I chose a design that could be done in stages so I could fit it in around looking after little Emily. Click here to see what I baked.

I have to admit, that like all contestants on the GBBO, I have never made a souffle! I love to eat them, but for some reason, I have never got round to making one, so this week I was actually a bit nervous – especially as you regularly see failed souffles on cookery programmes. Click here to see if I rose to the challenge.

I was really excited about patisserie week – I was hoping that the technical challenge would be something pretty and I wasn’t disappointed! Although these involved making various types of icings, which looked complicated and quite different to what I normally make, they turned out to be easier than I expected. I had my parents coming to visit this weekend as well as a few other friends popping over to visit, so this weeks Bake Off technical challenge was perfect, it meant that I had a yummy cake to offer everyone! I make quite a lot of fruit cakes, so I was keen to try this recipe to see how it compares. I have made my own marzipan a few times, but I have never made my own sugar paste, so this would be another thing to tick off the list. Click here to see how I got on.
