
It definitely feels like spring has arrived this week with some gorgeous sunshine and lovely warm weather! So I thought I should upload some photos of these pretty cupcakes. I made them a couple of years ago and have made several similar versions since as the flowers are very easy to make and look really good on top of the cupcakes. Can’t believe the bake off is over again for another year! It’s been another great series and I’ve really enjoyed watching it. I am quite relieved there are no more technical challenges though! I haven’t enjoyed them as much as previous years as some of them have been a bit obscure and required special equipment which has made trying the recipes at home a bit more challenging. I was tempted to get Rich to have a go at this one on the BBQ, but decided against it! I used the grill and a griddle pan instead. Click 
Before I watched last weeks episode of The Great British Bake Off I was worried that the technical challenge was going to be a bit strange – I’d seen the trailer with a bright green purée! However, after hearing what was in the cake I was excited to make it since I love pistachios.
It’s been a while since I made some cupcakes, especially ones that were an usual flavour and not just vanilla/chocolate with decorations on. So when I decided to go down to London for the afternoon to meet my best friend’s baby, I offered to make some cupcakes to take. I’ve already got a lot of rhubarb (I’ve made rhubarb and raspberry Frangipane tart, rhubarb crumble muffins, and I still have about 750g left!) so I decided to bake something with rhubarb. 
For the last two weeks I’ve been lacking sleep. Partly because of the Olympics (why do most of the finals have to be in the middle of the night?!) and partly due to being at a hen do last weekend for one of my friends, Sian. These Olympic themed cupcakes were for Sian’s hen do. We had a mini Olympics during the day on Saturday so I decided that some themed cupcakes would help re-fuel the athletes!
