A few weeks ago it was pointed out to me that I hadn’t done much baking for the office. I also realised I hadn’t bought anything back from holiday with me. So I decided to make some cupcakes to take into the office. Since the weather had been pretty rubbish, I thought some sunflower cupcakes might help bring the sun out… and they did! Last weekend it was my Grandma’s birthday. She loves knitting so when I saw these in one of the Hello Cupcake! books I knew I had to make them for her. I thought they would be fairly quick to make and decorate, and they were. However, I didn’t quite leave enough time for th cakes to cool down before I had to ice them so I ended up icing them while they were still warm – not something I would recommend! I’ve been wanting to make these cupcakes for ages and they were definitely worth the wait. The caramel cream cheese buttercream is probably one of the best buttercreams I’ve tasted for a while – the texture was so smooth and silky and it had just the right sweetness. I wanted to make some cupcakes which looked amazing for the bake off in the office yesterday to enter into the showstopper category. I’d looked through my Hello Cupcake book on Monday night but nothing jumped out so I asked Bertie in the office for ideas – she said I should make “the bear”… I think she was getting mixed up with Children in Need! But it did give me the idea of making Red Noses. This year’s noses are pretty cool and even have feet (they’re meant to be “di-nose-saurs”) but I decided making them 100% identical would take too long given I had other stuff to bake too, so I took the simplest one and based it on that. Several years ago (probably over 20!) I got a Cadbury’s Crunchie bar at a birthday party I went to. I decided I didn’t want to eat it so I gave it to my grandpa. However, he forgot to take it home with him so I held onto it until the next time I saw him. For a while afterwards he called me “Crunchie” and I would always get a Crunchie at Christmas or a Crunchie Easter egg at Easter. So when it came to trying to decide what to make him for his birthday this year I decided to make Crunchie cupcakes.

Last Christmas Tom gave me some great presents. One of them was a “Hello Cupcake” calendar. I have the Hello, Cupcake! and What’s New Cupcake? books and I love the fun ideas in them…. and the calendar has 12 new ideas for me to try! So I have decided that each month I will make the cupcakes for that month. January’s cupcakes were shoes, which I’d already made in December (got a bit ahead of myself there – maybe I’m psychic?!) so the first ones to make were the ones for February. Could you eat a dragon? Last week I had a week from hell at work – 60 hours worth of hell. However, I’d agreed a while ago to make these cakes for a friend in the office. I didn’t want to let her down so last Thursday evening I somehow managed to fit in making them. They had to be pastel pinks, purples and white, some with 21’s on, some with Jodie’s on and some with both on so I came up with a design I wanted to do. However, I was too tired to make them exactly as planned – I guess I’ll just have to save that design for another time.

About a year ago I was lacking inspiration for what I could bake one week. For some reason I decided to ask Jamie for ideas. He said I should make “a giant popping candy cake with a dragon on top”. I laughed and said I wanted serious suggestions! But then when I got home, and I realised I didn’t have anything else to do that evening, I thought why not try making a dragon out of icing. After I’d made one I decided it was quite cute so had a go at making another…. and after a couple of nights I had a small family of dragons!

Happy Birthday Cupcakes

Last week the other batch of cupcakes I made were these – happy birthday ones for Sarah. These weren’t what I intended to make but I didn’t have the ingredients I needed for the decoration and Tom had gone out for the night with our only set of house keys so I couldn’t leave the house! In the end, I was pretty pleased with them and I think Sarah enjoyed them too (even if we were all completely stuffed have eaten a massive curry just before!).
