It’s always fun to try new recipes of traditional things that people have reinvented. So when I was looking through my Christmas Olive magazine and came across a gluten free baking section I was very excited to see a recipe for Stollen bars. My husband’s family love Stollen – they spent several years living in Germany where Stollen originated. This recipe is amazing and well worth baking this Christmas. Click  here to try this recipe.

A couple of weeks ago I made some cakes to take down to the Leeds office when I went for the day. Given it was December I decided that I should make something Christmassy. I hadn’t been food shopping so I was limited with what flavour I could make so just went with vanilla. I’ve been making the same mince pies for years so decided to try something different this year. I had a look through my recipe books and found Nigella’s frangipane mince pies which sounded really good. I also made my own mincemeat too and used a different recipe which wasn’t as good as Delia’s so I’ll be going back to her recipe next year! Click  here to try these mince pies.

Last weekend Becky came up to stay for a long Christmassy/girly weekend! Of course, the weekend involved plenty of baking. As usual I am baking for Serpentine Running Club for the last cross country race before Christmas, so it seemed fitting to make something Christmas theme and in red and gold – the clubs colours. I love the Hummingbird Bakery Christmas cupcake recipe, it has got all the flavours of a Christmas cake, but its lovely and light and is topped with scrummy almond butter cream. I can’t believe it’s nearly the end of this years bake off! One more technical challenge to go. I ended up buying the tin for this weeks challenge – you can never have too many cake tins and I am sure I will use it again as it’s a very pretty shape. It’s been a bit of a crazy week as it was Emily’s 1st Birthday last Thursdays, so I had a very important Birthday cake to make which took priority, so I am only getting round to doing this now.
