I’d never made a 100th Birthday cake before, so I was thrilled to be given the opportunity to make one. It was for our close friend’s Granny, who is called Rose, so the request for pink roses on the cake was perfect. Last weekend I visited my sister-in-law Tams and her hubby Pete, they got married and bought a house together last year and this was our 1st visit, so I thought it would be a nice idea to make some ‘new home’ cupcakes. Last year for Easter Emma and I were back at our parents for a few days, so we thought it was about time we made a mess of Mum’s kitchen and did some baking! Simple Snowflake Cupcakes

Sometimes simple is best – and when you’re short on time, it always is. I know that it I can get a batch of cupcakes made and iced with buttercream in just over an hour. However, I usually underestimate how long decorations take to make. These snowflakes though are super quick to make, and anybody can make them since the only skills required are being able to roll fondant icing out and use a plunger cutter.

It’s December so I think it’s acceptable to start doing some Christmas baking. I always start thinking about what I want to bake for Christmas months in advance and then come up with a list way too long and completely unachievable. I’ve tried to be a bit more realistic this year but it still feels like there’s a lot to fit in in a short time! So here’s our first batch of Christmas baking…

I’m always looking for new ways to decorate cupcakes, and when I came across a photo of these, I decided they were too cute not to make. I was looking for something autumnal and had done various searches on the internet before I discovered them. Finding the ingredients to make them was the trickiest part – I think I had to empty 12 tubes of Smarties before I found enough red ones to make the toadstools and even then I didn’t have enough to make one to go on each cake as planned but I decided that if I went back to the Co-op to buy a third lot of Smarties they might start to ask questions so I left it! Amaretto Brownies

For Father’s Day this year, I decided to bake my dad a present – Amaretto brownies. Since I wasn’t going to see him on the Sunday, I gave them to him, freshly baked, on the Saturday. The plan was that he wouldn’t eat them until Father’s Day, but the temptation was too great and he couldn’t wait. He said he’d just have one, but after he’d eaten it, he decided one just wasn’t enough so had a second… after that my mum decided to ration them!

Several years ago (probably over 20!) I got a Cadbury’s Crunchie bar at a birthday party I went to. I decided I didn’t want to eat it so I gave it to my grandpa. However, he forgot to take it home with him so I held onto it until the next time I saw him. For a while afterwards he called me “Crunchie” and I would always get a Crunchie at Christmas or a Crunchie Easter egg at Easter. So when it came to trying to decide what to make him for his birthday this year I decided to make Crunchie cupcakes.

Giant Rolo – Chocolate Brownie and Caramel Cake

At lunch yesterday, I met up with Julia. She wanted to go to WHSmiths to look at cook books that were on offer so I said I’d go with her. She’s a very bad influence on me and pretty much forced me to buy another cook book – ok, maybe that’s an exaggeration… I saw the Green & Black’s Ultimate chocolate cook book with 75% off, asked her if it was any good (since she owns just about every chocolate recipe book), she said yes, so I bought it. I then had the urge to bake something chocolatey. So instead of cleaning/tidying the house yesterday evening before Julia stays tonight and my parents come up for the weekend, I made myself an early birthday cake. I’m sure Julia won’t mind (she’d much rather have a slice of chocolate cake than see a tidy house) and my parents will understand (they know me well enough to realise that I prefer baking to tidying 🙂 If you’re looking for an excuse for not doing the house work, or have an urge to make something really chocolatey, then keep reading.
