For the last few years I’ve made a Christmas cake for the office to be raffled off for charity. Having been on holiday for 3 weeks at the end of November/start of December I haven’t had much time to do much Christmas baking, and still haven’t decided how I’m going to decorate my own cake this year but I offered to make a cake for the office so yesterday I spent a couple of hours making this! This year I have been slightly more organised than last year and managed to make and decorate my Christmas cake on time! I wanted to try something different and designed a cake with quilled snowflakes. We learned how to quill icing on our Squires cake course last year, a technique I had never done before. I bought a set of star cookie cutters several years ago to make a star cookie tree and never got round to using them, so I thought instead of making a gingerbread house this year I would make a tree! Anne and I are still holding up our Christmas gingerbread baking day and it didn’t disappoint this year, can’t think of a more fun way to spent a day than baking with a friend! I’ve been making the same mince pies for years so decided to try something different this year. I had a look through my recipe books and found Nigella’s frangipane mince pies which sounded really good. I also made my own mincemeat too and used a different recipe which wasn’t as good as Delia’s so I’ll be going back to her recipe next year! Click here to try these mince pies.

It’s time for our 1st batch of Christmas baking! As usual I am baking for Serpentine Running Club for the last cross country race before Christmas, so it seemed fitting to make something Christmas theme and in red and gold – the clubs colours. I love the Hummingbird Bakery Christmas cupcake recipe, it has got all the flavours of a Christmas cake, but its lovely and light and is topped with scrummy almond butter cream. Simple Snowflake Cupcakes

Sometimes simple is best – and when you’re short on time, it always is. I know that it I can get a batch of cupcakes made and iced with buttercream in just over an hour. However, I usually underestimate how long decorations take to make. These snowflakes though are super quick to make, and anybody can make them since the only skills required are being able to roll fondant icing out and use a plunger cutter.

Last week I offered to do some baking for a cake trolley in the office to raise money for Sands (the Stillbirth and Neonatal Death Charity). The day before I wasn’t feeling 100% so I probably should have said that I could no longer make them, especially since I hadn’t even decided what I was going to make. However, I’m not that sensible so I didn’t say anything and ended up making these cute little penguins.
