Just over a month ago it was Emily’s 3rd Birthday. Being a typical 3 year old she was changing her mind every day about what kind of party and cake she wanted, slightly tricky when trying to plan things! Her favourite cuddly toy is her panda and so when I suggested that she had a panda themed party and cake, she seemed very excited and the idea stuck, phew! She takes after both her Aunties with her love of pandas. She asked for the cake to have a Mummy panda, a Daddy panda and and Emily panda on as well as some bamboo, so I did a bit of research and came up with a design. Before I watched last weeks episode of The Great British Bake Off I was worried that the technical challenge was going to be a bit strange – I’d seen the trailer with a bright green purée! However, after hearing what was in the cake I was excited to make it since I love pistachios.

As it’s Father’s Day today, I couldn’t resist baking a special cake for my Dad as a present. He loves pies, so I thought I would have a go at making a cake and turning it into a pie! I used Pinterest to look for a few ideas and found a great cake made by Clinton’s Cakes with chips, peas and a red and white chequed table cloth. I wanted to make a cake that would keep well for a week and also be one of my Dad’s and hubby’s favourite flavours, so I chose a sticky ginger cake recipe that I have made a couple of times before. Easter Bunny Cake

For the last few years I’ve made an Easter cake to raffle off for charity at work. I offered to do the same again this year for the charity of the month – Hearing Dogs.
Being at work all week meant I only had a couple of evenings to make and decorate it so I picked something fairly simple. The cake was a chocolate caramel ombré cake and I crumbled up the off cuts of the chocolate cake to make the soil. I covered the whole cake in green sugarpaste, cut out a circle from the middle and then filled it with the ‘soil’. The bunny was made from a ball of white icing flattened slightly and then put in the soil. I then stuck on a small ball of icing for his tail and made 2 feet which I finished off with a few small circles of pale pink icing. The carrots were made from orange icing and I marked some lines on them with the back of a knife. I added cake wire to the middle of the green carrot tops to keep them standing upright. Annoyingly they were slightly too tall to fit in the box so I had to break the tops off to make them a bit shorter!

Drunk Santa Christmas Cake

For the last few years I’ve made a Christmas cake for the office to be raffled off for charity. Having been on holiday for 3 weeks at the end of November/start of December I haven’t had much time to do much Christmas baking, and still haven’t decided how I’m going to decorate my own cake this year but I offered to make a cake for the office so yesterday I spent a couple of hours making this! This year I decided to try something very different for my Christmas cake, rather than doing something traditional I thought I would do something silly! I’d seen a photo of a turkey cake and thought I would try something similar. I also wanted to try a different flavoured Christmas cake but still wanted it to be a fruit cake so it would keep. I can’t believe that this years bake off has now finished! I really enjoyed watching it and thought the new presenters were great and I was really pleased with the result, Sophie throughly deserved to win! I’m actually feeling quite relieved that all the technical challenges are now done and I can start to think about Christmas baking. So here is my attempt at the iced ginger biscuits.

It was Emily’s 2nd Birthday last Friday and to celebrate we had a small family party at the weekend. She absolutely loves Old MacDonald at the moment and we seem to spend every car journey singing it, along with all sorts of animals as well as some vehicles (usually fire engines and boats) and other random things like peas and macaroni cheese! It was our parents 40th wedding anniversary on the 30th July so not surprisingly Em and I decided to make them a cake as a present! Celebrating 40 years of marriage is a wonderful occasion, so it had to be a very special cake for two very special people.
