It was my Birthday last week and I can’t think of a better way to spend the day than baking myself a cake! I don’t often get to bake exactly what I want, the cakes I usually do are for customers, so it’s really enjoyable to find a new recipe and experiment with some new designs. Owl Woodland Cake

Last year was a busy year and I didn’t get round to uploading photos of most of the cakes I baked. October and November were especially busy – with Emily’s 1st Birthday too. We had a small family party on the weekend of her Birthday and I made a baby friendly cake to eat – chocolate and beetroot. I wanted to do something woodland or owl themed and something where all the decorations could be made in advance, so this design was perfect. It’s always fun to try new recipes of traditional things that people have reinvented. So when I was looking through my Christmas Olive magazine and came across a gluten free baking section I was very excited to see a recipe for Stollen bars. My husband’s family love Stollen – they spent several years living in Germany where Stollen originated. This recipe is amazing and well worth baking this Christmas. Click  here to try this recipe.

I’ve been making the same mince pies for years so decided to try something different this year. I had a look through my recipe books and found Nigella’s frangipane mince pies which sounded really good. I also made my own mincemeat too and used a different recipe which wasn’t as good as Delia’s so I’ll be going back to her recipe next year! Click  here to try these mince pies.

I can’t believe it’s nearly the end of this years bake off! One more technical challenge to go. I ended up buying the tin for this weeks challenge – you can never have too many cake tins and I am sure I will use it again as it’s a very pretty shape. It’s been a bit of a crazy week as it was Emily’s 1st Birthday last Thursdays, so I had a very important Birthday cake to make which took priority, so I am only getting round to doing this now. In case you missed it, the Great British Bake Off started again last week! Becky and I both really enjoyed trying the technical challenges last year so we’ve decided we’ll be doing them again this year. Partly because of the Olympics (why do most of the finals have to be in the middle of the night?!) and partly due to being at a hen do last weekend for one of my friends, Sian. These Olympic themed cupcakes were for Sian’s hen do. We had a mini Olympics during the day on Saturday so I decided that some themed cupcakes would help re-fuel the athletes!
