For the last few years I’ve made a Christmas cake for the office to be raffled off for charity. Having been on holiday for 3 weeks at the end of November/start of December I haven’t had much time to do much Christmas baking, and still haven’t decided how I’m going to decorate my own cake this year but I offered to make a cake for the office so yesterday I spent a couple of hours making this! A couple of weeks ago I made some cakes to take down to the Leeds office when I went for the day. Given it was December I decided that I should make something Christmassy. I hadn’t been food shopping so I was limited with what flavour I could make so just went with vanilla. Last weekend Becky came up to stay for a long Christmassy/girly weekend! Of course, the weekend involved plenty of baking. Last year before Christmas I made some cute little penguins to go on top of cupcakes. They were pretty quick to make so given I only had an hour left before I wanted to go to bed last night, and I had 11 undecorated cupcakes, I decided to try making some robins in the same way! Last year I didn’t get round to writing about the Christmas cake I made, mostly due to being over ambitious with what I wanted to do before the big day – there were so many thing I wanted to bake, Christmas decorations I wanted to make and prepare for 12 people coming to ours for Christmas. I’d never hosted Christmas before either! So I thought I would write a short blog about it this year in between feeding, nappy changing, playing and watching Emily sleep – it’s amazing how much time you can spend just watching your little one! Yesterday I spent all afternoon in the kitchen, decorating the Christmas cake, whilst listening to Christmas tunes. This has been a tradition, since as long as I can remember. Several months before Christmas, Becky and I usually discuss what design we’re each going to do that year. This year for me it was easy – I’d found two designs last year and only had time to do one, the penguin bowling cake. Gingerbread Village and Hearts

This year I really wanted to practise my piping skills, so I decided that rather than making a conventional gingerbread house I would take my inspiration from Eastern Europe. Mince Pies

It’s about time we put some mince pies on the blog! If you only bake one thing this Christmas, have a go at these, they really are super, especially when they are warm straight out of the oven with a cup of tea. This recipe is from Josceline Dimbleby. This year I can’t make enough mince pies, I think I have already baked over 60, some are in the freezer ready for Christmas and the rest have been taking into the office as well as having a a few left over for an afternoon snack. I love a bit of Christmas baking, last year I worked my way through the cupcake recipes from the Hummingbird Bakery Cake Days book. I love the fruit cake cupcakes, the recipe is light and delicious and still has that lovely boozy fruit cake flavour.
