Finally this years GBBO is underway! It was a great start to the series and I can’t wait for next weeks episode already. I can’t believe that this years bake off has now finished! I really enjoyed watching it and thought the new presenters were great and I was really pleased with the result, Sophie throughly deserved to win! I’m actually feeling quite relieved that all the technical challenges are now done and I can start to think about Christmas baking. So here is my attempt at the iced ginger biscuits.

This week was caramel week on the Great British Bake Off and I was intrigued to see what the technical challenge would be. I didn’t watch it live but Becky text me after it finished and asked if I fancied buying an ice cream waffle cone maker – I was intrigued! Since neither of us own one, and Becky said she wouldn’t use it (it’s a bit hard to make them gluten free) I said I was happy to buy it but asked her to order it for me since I was away and worried it wouldn’t arrive in time. The best way to use up left over cake decorations is to do some more baking! I have a pot filled with left over flowers of various shapes, sizes and colours, so I picked out these ones to create some elegant biscuits! I usually use a biscuit recipe from the Biscuiteers Book of Iced Biscuits as they are always tasty and have the perfect texture. Click here to try their vanilla biscuit recipe.

I bought a set of star cookie cutters several years ago to make a star cookie tree and never got round to using them, so I thought instead of making a gingerbread house this year I would make a tree! Anne and I are still holding up our Christmas gingerbread baking day and it didn’t disappoint this year, can’t think of a more fun way to spent a day than baking with a friend! It’s not long till the bake off final, so only a few more weeks of technical challenges left. I’ve got a very busy few weeks, so it’s a good job that last weeks challenge was a quick and easy one! In case you missed it, the Great British Bake Off started again last week! Becky and I both really enjoyed trying the technical challenges last year so we’ve decided we’ll be doing them again this year. Last year we took it in turns to make them each week but we both decided we wanted to try the technical challenge from cake week – Jaffa Cakes!
