
Sometimes simple is best – and when you’re short on time, it always is. I know that it I can get a batch of cupcakes made and iced with buttercream in just over an hour. However, I usually underestimate how long decorations take to make. These snowflakes though are super quick to make, and anybody can make them since the only skills required are being able to roll fondant icing out and use a plunger cutter.

Mince Pies

It’s about time we put some mince pies on the blog! If you only bake one thing this Christmas, have a go at these, they really are super, especially when they are warm straight out of the oven with a cup of tea. This recipe is from Josceline Dimbleby. This year I can’t make enough mince pies, I think I have already baked over 60, some are in the freezer ready for Christmas and the rest have been taking into the office as well as having a a few left over for an afternoon snack. Narnia Christmas Cake

Last year I decided to make a slightly crazy Christmas cake, with lights and everything… and I’m not joking! I had seen a picture of this amazing cake and just couldn’t resist giving it a go. Penguin Cupcakes

Last week I offered to do some baking for a cake trolley in the office to raise money for Sands (the Stillbirth and Neonatal Death Charity). The day before I wasn’t feeling 100% so I probably should have said that I could no longer make them, especially since I hadn’t even decided what I was going to make. However, I’m not that sensible so I didn’t say anything and ended up making these cute little penguins.

I love a bit of Christmas baking, last year I worked my way through the cupcake recipes from the Hummingbird Bakery Cake Days book. I love the fruit cake cupcakes, the recipe is light and delicious and still has that lovely boozy fruit cake flavour. It’s December so I think it’s acceptable to start doing some Christmas baking. I always start thinking about what I want to bake for Christmas months in advance and then come up with a list way too long and completely unachievable. Since discovering that we have tawny owls living in the woods near us, I have found a new love for these gorgeous birds. For the last few years Becky has done lots of baking for her running club and always tries to make the baking in the running club colours – red and yellow. So when Tom joined a hockey club up here I decided I would start doing some team-colour themed baking for him. His hockey team, JPC HC, plays in blue and yellow and the first thing that came into my mind was minions – I’ve clearly made too many minion cakes! Is it possible to make too many minions?

Nine years ago I made Tom a birthday cake. It was the first baking I did while I was at university and the first time I’d baked anything for him. I had to go out to buy cake tins – I even had to call my mum to ask for her standard chocolate cake recipe. However, it was a fairly simple cake – an 8 inch round chocolate cake, sandwiched together with chocolate buttercream and decorated with Smarties. Since then, I’ve always tried to make Tom a cake on his birthday – I even sent him gingerbread when he was in Afghanistan – and each year I try to make something different and better than the previous year.
Last year I made him a Minion.

A couple of weeks ago Aimée, one of my friends from work got married. She asked me/I offered to make her wedding cake. As with most of the other wedding cakes I’ve made, she said she wanted something “simple”. Based on past experience “simple” often doesn’t end up being simple!
