Last weekend Becky came up to stay for a long Christmassy/girly weekend! Of course, the weekend involved plenty of baking. As usual I am baking for Serpentine Running Club for the last cross country race before Christmas, so it seemed fitting to make something Christmas theme and in red and gold – the clubs colours. I love the Hummingbird Bakery Christmas cupcake recipe, it has got all the flavours of a Christmas cake, but its lovely and light and is topped with scrummy almond butter cream. It’s not long till the bake off final, so only a few more weeks of technical challenges left. I’ve got a very busy few weeks, so it’s a good job that last weeks challenge was a quick and easy one! I had my parents coming to visit this weekend as well as a few other friends popping over to visit, so this weeks Bake Off technical challenge was perfect, it meant that I had a yummy cake to offer everyone! I make quite a lot of fruit cakes, so I was keen to try this recipe to see how it compares. I have made my own marzipan a few times, but I have never made my own sugar paste, so this would be another thing to tick off the list. Click here to see how I got on.

Last night, was my last opportunity to try the technical GBBO challenge before this week’s bake off. So, I decided to give it a go. I read through the recipe a few times before I started and it didn’t seem that difficult, just quite time consuming. However, they turned out to be trickier than I thought, even with the full instructions (which seemed half complete to me so I don’t know what the contestants got given)! I’d never made a 100th Birthday cake before, so I was thrilled to be given the opportunity to make one. It was for our close friend’s Granny, who is called Rose, so the request for pink roses on the cake was perfect. Last year for Easter Emma and I were back at our parents for a few days, so we thought it was about time we made a mess of Mum’s kitchen and did some baking! We wanted to do a slightly different take on a traditional Simnel cake, and came across this yummy chocolate orange Simnel cake recipe. The decoration was another idea taken from Pinterest. Last weekend was another cross country race and that gave me another excuse to try out a recipe I haven’t done before and experiment with the decorating. I chose stem ginger cupcake as I wanted a flavour that would be warming in this cold weather, also I hadn’t made them before so it was good to tick off another recipe from the long list! I struggled a bit to think of something to theme the cupcakes with as this time of year seems to be quite uneventful, unlike Christmas. So I chose to make some cows and daisies that could incorporate a subtle red and yellow theme – by using red and yellow centers for the daisies – Serpentine running club colours.
